It is a wine conceived in opposite trend to the immediate wines, purpose built for tasting. But if you discover its personality, potential for food pairing and aging and treat it as a great red wine, you will be surprised by its hidden pleasantness.

Current available vintage: 2012

Vinification: 60 days maceration on skins in stainless steel tanks. Spontaneous fermentation with indigenous yeasts, very low level of sulphur dioxide, no other additives used.

Aging: in stainless steel tanks

Production: about 6000 bottles

Age of the vines: 40 and 15 years

Aging potential: at least 15 years

Serving temperature: 10 ° – 14°

Food pairing: cheese, white meat, stock fish…
