Pecoranera is the wine we would have never thought to produce, it cancelled some of our convictions about blending several grape varieties. Hence its name (“Black Sheep”)

A wine of great complexity with dominance of a grape “close relative” of Nebbiolo.

Current available vintages: 2004 and 2005. Two vintages, very similar in terms of weather and taste at the beginning, are now evolving quite different.

2004 shows an excellent evolution, with tertiarization and evolved tannins, it is a “relaxed” wine that reflects the territory and our idea of wine for long aging.

2005 is a nervy and fresh wine, with ripe but still rough tannins. It is the other side of the coin, the still “tense” aging wine.

Vinification: about 40 days maceration on skins in wooden vats, stainless steel and cement tanks. Spontaneous fermentation with indigenous yeasts, very low level of sulphur dioxide. No other additives used.

Aging: for 12 months in wooden vats of different size

Production: about 15.000 bottles

Age of the vines: 30 years

Aging potential: 20 years and more

Serving temperature: 15 °

Food pairing: Grilled steak as the famous “Fiorentina”,  game, roasts.
