In the oldest cadastral map of the property (from the late 1600s), Pratoasciutto was the name of the field where we planted the vineyard for the grapes we use for this wine. Here the water is well drained from the sandy soil.

Carachteristics

Great tannins and linearity. Pratoasciutto is a wine of strong character. According to an old tradition in Langa, the selection of the dolcetto grapes coming from the best vineyards was vinified together to become a long aging wine.

Production: about 6000 bottles

Age of the vines: 40 years

Aging potential: 20 years and more

Serving temperature: 15 ° -16 °

Food pairing: pasta dressed with rich and tasty meat sauces or agnolotti; aged cheeses and salumi, tasty red or white meats.
