Vinification: 40 days maceration on skins. Spontaneous fermentation with indigenous yeasts, very low level of sulphur dioxide, no other additives used.

Serving temperature: 15 ° -16

Food pairing: risottos and first courses with elaborate sauces. Red meat, stews, boiled meats, lamb.
