MonteMattina is named after the territory it comes from. It was born because Sancho Panza was never enough and ended always too early to show the long aging potential of the wine. With almost two additional years of aging, Montemattina already shows a good evolution.

Montemattina - Fiano

Characteristics

Wine with fine tannins showing complexity and great maturity.

Current available vintage: 2016, cold vintage in a cold area

Grape variety: 100% Fiano

Vinification: about 60 days maceration on skins. Spontaneous fermentation with indigenous yeasts, very low level of sulphur dioxide (0-10 free, 10-20 total), no other additives used.

Aging: two years in stainless steel tanks

Aging potential: suited for long aging 15-20 years

Serving temperature: 10°-12°

Food pairing: cheese, smoked fish, shell fish and tasty first courses.
