The idea of the name comes from the first wine Guido Zampaglione produced from Fiano grapes in Calitri in 2004: Don Chisciotte. Don Quixote because Guido, as a crazy-dreamer, was the only one who believed in planting Fiano at 800 meters above sea level

Characteristics
Acidity, drinkability and good complexity are the peculiary of this wine made from 100% Fiano grapes.
Current available vintage: 2018.
Grape variety: 100% Fiano.
Vinification: about 60 days maceration on skins. Spontaneous fermentation with indigenous yeasts, very low level of sulphur dioxide (0-10 free, 10-20 total), no other additives used.
Aging: one year in stainless steel tanks.
Aging potential: suited for long aging, 15-20 years.
Serving temperature: 10°-12°
Food pairing : pasta or risotto with vegetables or fish , white meats.
